Salted Caramel Mini Rolls

For my birthday Corrie & Jody got me a ‘Bake Off Box’ baking kit and between Christmas and New Year I had a go at baking it.

The idea is that in the box you get a recipe and the dry ingredients for something tasty to bake. I had the September box which was the ingredients and recipe for salted caramel mini rolls.

There were, in short, 4 parts to making the rolls: Make the caramel crunch (caramelise the sugar, let it set, then chop it finely); Make the filling (eggs, flour, butter, sugar etc. all mixed together), make the sponge. Once the sponge is cooled spread the filling over and then sprinkle over the caramel crunch. Roll them up and put in the fridge. Then it is time to make the salted caramel topping: I kept eating bits of it while I was making that – it tasted delicious!

Finally we melted the chocolate and poured that over the rolls and used a piping bag to put the salted caramel topping on.

On Thursday night I went over to Corrie and Jody’s flat to share the mini rolls. They didn’t quite look like they should have done, but it is the taste which counts.
